
Chattanooga Whiskey has announced the release of its newest seasonal whiskey, the Bottled in Bond: Fall 2021 Vintage. The new Tennessee whiskey was distilled at the company’s Riverfront Distillery between July and December 2021 and introduces a new mash bill to the series.
This latest vintage was developed through a collaborative selection process by the distillery’s team.
Grant McCracken, founding distiller, said: “Every six months, our team looks through our wide library of recipes to decide which ones have what it takes to find their way into a blend. From mash bill, to yeast strain, to barrel toast, every component is considered in the blending process—until ‘the best blend wins’.”
The release features the debut of mash bill SB104, a three-grain recipe comprising 74% yellow corn, 15% slow-toasted Canadian malted rye, and 11% Belgian ‘Cara-Munich’ malted barley.
Originally developed at the brand’s Experimental Distillery in 2020, SB104 makes up 20% of the final blend.
The final blend is composed of four mash bills: 30% SB091 (aka Barrel 91), 30% SB055 (aka Roasted), 20% B005 (aka Whearted), and 20% of the new SB104.
“SB104 was a standout in our blending – adding bright spice, subtle fruit, and a baked-pastry quality that locked in with the others,” McCracken added. “Because it uses only two specialty malts, that flavor impact reads even louder.”
Official notes from the brand include cinnamon sugar donut, cheesecake, fig jam, and toasted oak.
Founded in 2011, Chattanooga Whiskey was instrumental in changing local laws to permit distilling in the city for the first time in a century. The company is known for its Tennessee High Malt style and was named Global Craft Producer of the Year at Whisky Magazine’s 2023 World Whiskies Awards.
Chattanooga Whiskey Bottled in Bond: Fall 2021 Vintage will be available from the distillery on October 16, 2025. It will roll out to select states in the following weeks for a suggested retail price of $52.99 per 750ml bottle, with limited quantities available online via Seelbachs.com.
