About:

Highland single malt distillery The Dalmore has introduced a new expression to its core Principal Collection, The Dalmore Aged 17 Years. The new whisky has been finished in a trio of rare sherry casks from González Byass.

The release is designed as a further exploration of the brand’s expertise in sherry cask maturation.

Its maturation begins in American white oak ex-bourbon barrels. The Dalmore states that each cask imparts its own characteristics into the spirit.

Apostoles is said to bring structure, depth, and savory complexity, while the Amoroso cask offers harmony and balance between savory and sweet flavors.

Matusalem Oloroso adds weight, roundness, and a lingering sweetness.
Appearance:
Copper tending toward tawny in color with thick legs. Tasted neat in a Glencairn glass.
Nose:
Delicate fruity with sweet peat notes. It opens into dried apricots and golden raisins. There is a subtle undertone of honey accompanying the soft sherry.
Palate:
Sweet, smooth, and just the right weight. We open with honey and oak. Malted grain sweetness with blended dark teas to carry across the mid palate. Softer sugers open the later portion of the dram and expose red fruit with just a hint of peat.
Finish:
A well balanced finish of crisp dry oaks.
Comments:
The sugars and oak sweetness are balanced well against the richer fuller profiles of the grains. Very approachable for all levels of enthusiast.
