The bourbon starts with grains grown on the Huber family’s estate, part of Huber’s Orchard & Winery. The distillery mills and ferments the grains on-site using a sweet mash process before double pot distilling in a 500-gallon copper still. This complete control over production from seed to spirit distinguishes Starlight from larger commercial operations.
The whiskey aged for 10 years in Seguin Moreau Icône barrels from the cooperage’s Napa Valley facility. Starlight stored the barrels in the warmest section of Warehouse 2, where higher temperatures accelerated flavor development. Family members personally selected each barrel for bottling at peak maturity.
