For the 2025 Reserve Stout, Goose Island uses the Parker’s Heritage Collection 10-year 17th Edition Rye Whiskey barrels. Anyone who has had the privilege of sipping this fine bourbon appreciates that it feels much older than it is. From the rich rye spice to a slight chocolate note, it feels seductive yet unimposing. Enjoying a pour on a chilly winter day brings the warmth and comfort that satisfies long after the glass is empty.

Other flavors are quite clear. The dried fruits feel like the holidays. It might not exactly be a traditional fruit cake scenario, but that sweetness with warmth feels comforting.

Additionally, the cocoa adds some richness. Although never sweet, it helps to round out the stout. For anyone who prefers to drink their dessert, the 2025 Goose Island Bourbon County Reserve Stout is the perfect end to a meal.

Personally, I enjoyed this particular stout after a braised short rib with parsnip puree and roasted mushrooms. It was a hearty meal that deserved a final sip that stood up to all those big flavors. If I were lucky enough to get another bottle, I would love to do venison with a cherry demi and some roasted potatoes.
