Independent Scotch whisky producer Eden Mill has reached a significant milestone with the installation of copper wash and spirit stills at its new St Andrews distillery, marking a crucial step toward beginning production at the Eden Campus location.
The heart of the new facility features two hand-crafted copper stills manufactured by LHS in Speyside. Eden Mill head distiller Scott Ferguson collaborated on their design, aiming to recreate the light, floral, and grassy new make spirit profile he first developed in 2014.
Equipment Specifications Drive Flavor Profile
The installation includes a 15,000-liter onion-shaped wash still and an 11,500-liter boil-ball spirit still, complemented by a shell-and-tube condenser. Ferguson selected this specific configuration to produce a lighter, sweeter spirit with delicate characteristics.
Commissioning of the stills will begin in March, when the team will start fine-tuning the new make spirit before filling the first casks at the new facility.
Sustainability at Core of Operations
The distillery, situated on The University of St Andrews Eden Campus, emphasizes environmental responsibility in its operations. Recent developments include a partnership with Scottish firm MiAlgae to convert distillation by-products into micro-algae, reducing dependence on wild-caught fish for Omega-3 production.
The facility will operate its gin still using 100% renewable energy, partially sourced from the University’s solar farm. Plans also include capturing and repurposing CO₂ generated during fermentation.

The distillery, located just seven minutes from St Andrews, plans to welcome visitors in summer 2025 with immersive tours, a retail shop, and a third-floor cocktail bar offering views across the Eden Estuary.
