Proof and Wood have released a new iteration to their straight rye whiskey. Using 8 year old straight rye whiskey they finish in Laird’s Apple Brandy Barrels. Laird’s is one of the oldest licensed distilleries in the United States having been founded in 1780.

In a press release Gerard Dunn of Laird’s is quoted as saying, “We are thrilled to see one of our 8.5-year-old apple brandy barrels find new life in this special release of Tumblin’ Dice. The rich character developed over nearly a decade of aging our apple brand adds a unique layer of complexity and fruit-driven depth to the rye whiskey. A Limited 10-Barrel Release That Marries Bold Rye with America’s Oldest Apple Brandy. Proof and Wood Ventures proudly announces the newest release in its acclaimed Tumblin’ Dice line: Tumblin’ Dice Single Barrel Rye, Finished in Laird’s Apple Brandy Barrels.
This unique expression begins with a bold rye whiskey—crafted from a mash bill of 95% rye and 5% malted barley.

Proof and Wood is the project of David Schmier, formerly with Redemption Rye. The portfolio of Proof and Wood has garnered international acclaim with several excellent Canadian Whiskys like “Blame Canada 22-year Rye” among others.
Appearance:
Deep amber/caramel.
Nose:
Apple brandy, apple juice, soft rye grains mixed with ripe green and honey crisp apples. I shouldn’t be surprised by the nature of the apples in the nose, but it was intoxicating how varied the nose was.
Palate:
Starting off with an excellent rye hit before folding into apple cider, hint of malt and touch of orange oil. Good burn of flavors with strong personality and hidden notes of bergamot, clove, and fall spices.
Finish:
Dry with an oily mouthfeel. Medium length hold with a finish touch of season oak and green apples on the back end.
Comments:
This is perfect for Fall and Winter! Man, the apples play so nicely with the rye in this release. To me this is a fun one for mixing, for heating up in a Hot Toddy, or mixing into a spiked cider. The options are rather robust and I think it will do well to hold it’s own. While the profile didn’t necessarily show itself off too much, it was a lot of fun to sip on. If you love cider apples and rye, this will be a fun pick-up to have and break out in the crisp Fall air!
