About:
High West, arguably Utah’s premier whiskey producer, is introducing a new Bottled-In-Bond release to it’s portfolio. High West released a bonded rye last year, and this year introduced a 5-year bourbon to it’s bonded portfolio.

According to High West the, Bottled In Bond Bourbon, is a straight bourbon whiskey, produced in-house at their distillery in Wanship, Utah. It’s made in conformity with the Bottled In Bond Act of 1897. The act, for those unfamiliar, was the first food purity law in the United States and was designed to ensure the whiskey in the bottle is what it purports to be.

This release is like a single vintage of wine, offering an intimate snapshot of the distiller’s process. One base spirit, crafted at a single distillery, by a single distiller, in a single distilling season. Must be aged a minimum of 4 years and bottled at 100 proof in a federally bonded warehouse.

Experience a high-rye bourbon crafted for bold flavor, featuring a mashbill of 36% rye and 64% non-GMO yellow corn.
Appearance:
Dark copper with thin legs.
Nose:
Bright with notes of brown sugar, molasses, young oak, dried cherries. It evolves to being a bit more bold and a touch of alcohol.
Palate:
Molasses sugar, blended with oak and charcoal. Drying to the tongue with malt chocolate, clove, and blood orange.
Finish:
The mouthfeel is quite nice albeit watery, slightest burn at the end. The lingering flavors include some mint and gummy candy.
Comments:
This is a fun and full flavored bonded bourbon. I will admit, I am partial to bonded whiskey. This hits a lot of the notes and aspects I love about bonded whiskey. It’s got a bite, but not too much, it has a lot of dark complex sugary flavors you love in bourbon without being overwhelming, and it still allows for a distillers unique flair.

If you’re a fan of HW and Bonded Bourbon this is a must have. As the distillery says itself, this is a lovely snapshot of a moment in time for a distillery. I’m hopeful the age statement only continues to increase but equally 5-years is a nice spot for this whiskey.
