The Crolly Distillery has opened public pre-orders for Croithlí Cognac Single Cask — Single Pot Still, the first licensed single pot still Irish whiskey from Donegal. Batch 1 has 1,000 bottles priced at €139, about $156 (£116 / ₹14,769), each via thecrollydistillery.com, with dispatch beginning on November 1, 2026.
Distillation, maturation and bottling all took place at the distillery in the Donegal Gaeltacht.
The whiskey follows the single pot still standards of the Irish Whiskey Geographical Indication (GI). Single pot still is a style unique to Ireland. Under the GI rules set out by the Irish Whiskey Association, the mash bill must contain at least 30% malted barley and at least 30% unmalted barley.

READ THE STORYThis sets the release apart from Croithlí’s existing single malt range, which uses only malted barley.
Conor McMenamin, co-founder of The Crolly Distillery, said: “Bród — pride. That’s what this moment means to us, and to everyone who has played a part in shaping the story of Croithlí so far. This is Donegal’s first-ever licensed single pot still whiskey. That gives this first batch a significance that reaches beyond our own distillery.”
The distillery double distilled the spirit over direct fire in vintage Cognac Charentais copper stills from France. The whiskey then fully matured in 300-liter, non-charred French oak ex-Cognac casks from Alter Oak Cooperage in Le Bouscat, Bordeaux.
Master distiller Julio Diana said: “The extended copper contact refines the character of our spirit, while full maturation in Cognac-seasoned French oak imparts depth and complexity.”
Official notes from the brand describe baked orange peel, toasted hazelnuts and rich Cognac aromas on the nose. The oily palate offers poached pear, dark honey, spiced fruitcake and warming oak. A lingering finish brings dried apricot, pear and “a delicate echo of fine Cognac.”
At 53.9% ABV cask strength, the 700ml release is non-chill filtered and naturally colored.
Members of the Croithlí Le Chéile whiskey club had an exclusive priority period before the public launch.
The release joins Croithlí’s single malt portfolio. This includes the limited-edition PX and Oloroso Single Cask whiskeys, the Coillín Darach Oak Series and Single Malt Triple Cask.
Its home once produced Donegal Carpets and Crolly Dolls.
“We want Croithlí whiskey to carry the name of this renowned Gaeltacht village just as far,” McMenamin said.
