Watch Hill Proper, an upscale bar in Norton Commons, Louisville, is celebrating its 2nd anniversary in the second half of April 2024.
In just two years, the bar has become a go-to destination for American whiskey lovers; the bar is home to the largest collection of American whiskey and bourbon in the country.
In celebration of this milestone, the bar and kitchen is presenting a new menu and has curated a celebratory cocktail.
The Watch Hill Proper Two Thymer
The celebration cocktail, named The Two Thymer, features Watch Hill Proper’s own 5 Year Old Bourbon, made in-house ginger/thyme liqueur, honey cava syrup, fresh lemon, and topped with champagne.
The Two Thymer will be available at Watch Hill Proper between April 11th and April 30th for anyone over 21. Those who purchase the cocktail will also be entered into a draw to win the chance to purchase a bottle of 10 Year Old Old Rip Van Winkle for $69.99.
The New Menu
In addition to the limited Two Thymer cocktail, Watch Hill Proper is also unveiling a new menu at its restaurant. The menu includes an old favorite of patrons – the Pappardelle Pasta. Also on the menu will be lamb rib and caviar.
The new menu will be unveiled on April 23rd.
The Largest American Whiskey & Bourbon Collection In The Country
Coinciding with the bar’s 2nd anniversary is a new milestone in the bar’s whiskey collection: the collection has now officially passed 2,000 bottles.

Bottles in the collection include E.H. Taylor Barrel Proof, the Heaven Hill Heritage Collection 18 Year 2024 Release, and Blanton’s Gold Label. These whiskeys are all available by the pour at Watch Hill Proper.
