Redbreast Dream Cask Oloroso Sherry Edition Flies Out Of ‘The Birdhouse’

Thousands of whiskey fans from around the world recently entered an online ballot to purchase a limited-edition bottle of Redbreast Dream Cask.

The fourth in the annual series produced by Irish Distillers at Midleton Distillery, only 924 bottles were available globally. More than 11,000 people signed up for a chance to purchase this year’s Dream Cask Oloroso Sherry Edition, launched through Redbreast’s online members’ club, The Birdhouse.

Billy Leighton, master blender at Irish Distillers, said in a prepared statement, “This year’s release is extremely special to me as it combines traditional whiskey making with new ways of finishing to create a remarkable whiskey. A joy to behold with every sip, Dream Cask Oloroso Sherry Edition will take our successful entrants on a journey from Ireland to the Spanish bodegas of Jerez de la Frontera where our Oloroso cask was sourced.”

This whiskey, for those unfamiliar with it, is a 29-year-old single pot still Irish whiskey that was brought into being by vatting together four special whiskeys, aged for a minimum of 29 years in ex-bourbon, sherry and ruby port seasoned casks.

  • Cask 1 – A single pot still Irish whiskey distilled in 1989, matured in an ex-bourbon barrel and re-casked into a ruby port cask in 1995.
  • Cask 2 – A single pot still Irish whiskey distilled in 1991, matured in a second-fill ex-bourbon barrel.
  • Cask 3 – A single pot still Irish whiskey distilled in 1991, matured in a second-fill ex-bourbon barrel.
  • Cask 4 – A single pot still Irish whiskey distilled in 1991, matured in an ex-bourbon barrel and re-casked into a sherry butt in 2011.

Leighton said the whiskeys were married in one single outstanding Oloroso sherry butt from Jerez de la Frontera in Spain’s Andalusia region, and left to mature for a further 15 months before bottling. He noted as well the distillers and the team have been “overwhelmed by the phenomenal response to this year’s ballot and delighted to see the continued momentum” for the Redbreast Dream Cask collection.
