Irish Whiskey J.J. Corry, The Dead Rabbit Team For New Release

Irish whiskey bonder J.J. Corry recently teamed up with world-renowned pub The Dead Rabbit on an exclusive whiskey collaboration, The Cask Series.

This will be part of The Dead Rabbit’s “Spirits of Ireland” brand, and a statement from the whiskey maker noted that The Cask Series is a single malt Irish whiskey finished in Amontillado, Oloroso, Palo Cortado, and Pedro Ximénez Sherry casks.

In all, only 250 bottles will be available, sold exclusively at The Dead Rabbit’s New York bar and direct-to-consumer in select states at J.J. Corry’s website.

This expression is the product of a vatting of single malt Irish whiskey from J.J. Corry’s library of barrels. The Cask Series was matured in ex-bourbon casks and finished for 12-18 months in Bodegas Garvey Amontillado, Palo Cortado, Oloroso and PX Sherry casks sourced through artisanal cask producers Casknolia in Montilla, southern Spain.

The distiller’s notes describe the finished whiskey as “versatile and nuanced,” with the influence of Sherry casks from Bodegas Garvey imparting notes of sweet dates, raisin, dried apple and orange along with soft floral notes.

The Dead Rabbit’s director of Irish whiskey, Mark McLaughlin, said that this release marks the first bottling under the pub’s “Spirits of Ireland” brand. Through his relationships with brands and distilleries across Ireland, he said, they set out to conceptualize and execute collaborations that will further the depth of flavor in their Irish whiskey selection at The Dead Rabbit NYC, and across future venues across the U.S.

Corry has been one of the most exciting Irish whiskey brands to watch in recent years,” McLaughlin said. “By revitalizing Irish whiskey bonding, they’ve brought an entire category back to life, and we are delighted to have been able to create such an immensely flavourful whiskey alongside Louise McGuane and her team.”

In her role as a modern Irish whiskey bonder, McGuane curates a library of Irish whiskey flavors, drawn from both traditional and contemporary distilleries across Ireland. She travels the world to seek out the rarest and finest of casks from cooperages, bodegas, and wineries and matches them with Irish whiskies from her library of flavors.

Her notes for The Cask Series show the expression to clock in at 100 proof (50% ABV) with no artificial coloring or chill-filtration. It has a suggested retail price of $89.99.
