Rabbit Hole Expands Limited Edition Collection With PX Sherry Cask Finished Bourbon

Rabbit Hole has added to its lineup with a new addition known as Dareringer Founder’s Collection, a cask strength bourbon finished in PX Sherry casks.

A statement from Rabbit Hole noted that this limited-edition bourbon utilizes barrels crafted in Spain. It’s a spirit that Rabbit Hole founder and whiskey maker Kaveh Zamanian said is the product of his fascination with barrel aging.

In fact, the casks were crafted by the Cabello family of the Casknolia Cooperage in southern Spain. The casks that aged the Dareringer Founder’s Collection are made from rare, 60 year old wood that had been used to age a succession of PX Sherry and brandy made in partnership with three of Spain’s oldest producers.

Zamanian said that for this bourbon, he knew he was going to hand-select and set aside for aging these special #4 toasted and charred new American oak barrels.

“Rabbit Hole represents a commitment to pushing bourbon beyond its traditional boundaries and with our Founder’s Collection, we take our creativity a step further,” he said. “For this, our fourth Founder’s Collection release, my team and I set out to honor our core offering of Dareringer Straight Bourbon Whiskey.”

Dareringer Founder’s Collection lends a more pronounced Sherry profile. It has a mash bill of 65% corn, 25% wheat and 10% malted barley.

The PX Sherry finished bourbon clocks in at a cask strength of 51.1% ABV, or 102.1 proof.

Zamanian’s distiller’s notes show the Dareringer Founder’s Collection offers aromas of custard, walnut, brown sugar and baking spices on the nose. It tastes of cinnamon, oak, tobacco and stone fruit with blackcurrant, cherry and lemon influences. It finishes medium-to-long with notes of toffee and pecans.

A total of 2,444 sequentially-numbered bottles have been released at Rabbit Hole Distillery and for purchase at select retailers for a suggested retail price of $295.
