George Dickel is one of the oldest whiskey makers in Tennessee, with a history dating back to 1878 when the original Cascade Hollow Distillery opened (in 1958, a new distillery was opened down the road from the original). Today, Dickel is helmed by General Manager and Distiller Nicole Austin, whose tenure has been marked by numerous accolades for new releases that are very much in the spirit of the brand’s storied past.
Dickel’s reputation was built on smooth spirits and the technique of using cool nighttime temperatures to encourage “mellow” qualities in the spirits. This is still reflected by today’s operations at the new Cascade Hollow Distillery, where they augment the Lincoln County Process that defines Tennessee whiskey by chilling the whisky before it is charcoal filtered.
This past fall Dickel released a new bottling of their celebrated Bottled in Bond Tennessee Whisky, distilled in 2008. This whiskey, aged 13 years, follows on the heels of among others, a May 2020 bottling from the same year, aged 11 years, that was awarded Double Gold at the 2021 San Francisco International Spirits Competition.
Consistent with previous George Dickel Bottled in Bond releases, this edition has a mash bill of 84% corn, 8% rye, 8% malted barley, and is bottled at 100 proof.

Appearance: Rich amber color, darker towards the center with a medium body.
Nose: Cherry cola with a background of woody aromas.
Palate: Classic bourbon notes on the sweeter side of the spectrum. Cherry, vanilla, and a dash of black pepper for good measure with strongly represented caramelized, pecan pie sugar that outlasts the rest on the palate.
