About:

Part 2 of the Sinteis Series, an exploration of virgin Scottish oak, combined with ex-Oloroso sherry for a varying and very interesting flavour profile.
Appearance:
Old Oloroso
Nose:
Lots and lots of butter! Raspberries, dark chocolate, leather, coca-cola syrup, mint, demerara sugar and cherries in syrup.
Palate:
Tangy wood notes with lemongrass, coca-cola, chocolate orange, wood tannins, French toast and maple syrup.
Finish:
90% cocoa, raspberries, black peppercorns, brioche, Champagne lees, angelica root, cocoa powder and more cola syrup.
Comments:
Complex, layered, interesting and one of the better showcases I’ve tried of Scottish oak. Billy Walker loves this stuff and has explained in the past that it’s spice levels match that of French Oak. Hopefully more of this, and some more interesting virgin oak influences over the next few years.
