About:

Whiskey JYPSI is the celebrity whiskey of musician Eric Church. Born in Nashville, Tennessee, this whiskey brand is relatively new but producing some high end whiskey without the normal ‘high end’ price tag. Granted, all things ‘high end’ are relative. I don’t have to reiterate the explosion of celebrity endorsed whiskey. We are in a glut and it seems there is no end in sight. The promise here is maybe being Guided by whiskey maker Ari Sussman might help make this series stand out of the crowd.

Whiskey JYPSI’s website explains, “Our Legacy Series is based on sourcing individual well-aged whiskey components from various origins and using cross-category blending to reconstruct a traditional mash bill rather than blending the grains before fermentation. This allows us to select from a wider portfolio of international whiskeys and ensure that each whiskey is at the exact right age and flavor profile to perfectly harmonize within this extraordinary blend.

Legacy Batch 003: “The Declaration” is a visionary blend of whiskeys ranging from eight to twenty-five years old. It’s is a thoughtful salute to independence, quality, and innovation and represents our own “Declaration” — a statement of independent thinking and the way we tell stories through whiskey. Batch 003 revives and reimagines a Colonial-era Maryland-style rye mash bill-crafted with aged spirits from three distinct origins and a finish that directly connects to George Washington’s historic Mount Vernon Distillery.

This 115.74 high-proof blend is built from a bold Indiana rye that is finished in apple brandy barrels from Mount Vernon Distillery, a rare Canadian corn whiskey re-barreled in new American oak, and aromatic Virginia single malt. The result is a layered, full-flavored whiskey that pays tribute to the past while charting a bold course forward.”
Appearance:
Clear copper in color with semi-slow legs that cling to the glass. Tasted neat in a Glencairn.
Nose:
A great medium complex nose. Notes of caramels and flowers out the gate, rose and lavender? Opens to ripe red fruits, candies and soft honey. There is a finish of tobacco, wonderful and fun nose.
Palate:
Dry oily mouthfeel with a smooth profile and medium complex body.

This is a fun exploration in flavor. Caramel and tobacco off the top, leather, rice pudding, white peppers and rich oak from the start to mid-palate. We find some toffee and espresso bitterness interwoven as well. This is a nice execution for a balanced profile, fun with enough going on to really enjoy the sip.
Finish:
A nice long finish on the tongue that lingers appropriately. Pepper and sugar with excellent balance which sits nicely.
Comments:
Well there you have it, this is a great dram. This isn’t the first celebrity whiskey I’ve liked but it’s certainly the first I can think of off the top of my head. Just a nice clean sip, good complexity, fun and keeps things interesting. It’s got a body and isn’t apologetic about it. I’d share, don’t mix, invite friends who want something that will sit in the glass and they can enjoy over time. No rushing this.
