
Independent bottler The Heart Cut has launched its 23rd single cask release, this time partnering with Ireland’s family-run Boann Distillery. The bottling marks the company’s 19th distillery partner across 11 countries and spotlights what it describes as the new wave of producers reviving the traditional character of Single Pot Still Irish whiskey.
Boann Distillery, independently owned and operated by the Cooney family, has built a reputation for challenging modern conventions around the Single Pot Still style. The distillery reintroduces historic mash bills that incorporate grains beyond barley, aiming to restore the texture, spice and complexity that once defined the category.

The Heart Cut said Boann stands out for two key reasons. The first is its commitment to bringing back the use of “other grains” — mainly oats, wheat and rye — in its Single Pot Still production. The second is its purpose-driven approach to distilling, rooted in flavor and independence, with initiatives such as Origin Green Gold membership reflecting a genuine commitment to the surrounding land and sustainability.
Co-founder Georgie Bell said: “Every cask we bring out is a chance to show a different side to whisky from a style, flavour or geography perspective, and a different viewpoint from the producer. Boann really stands out to us because it’s such a strong example of where Single Pot Still Irish Whiskey is heading – rooted in heritage, but full of fresh energy and flavour.
“The Cooney family is doing something genuinely exciting, and the Moscatel cask has given the whisky this beautiful mix of fruit, spice and richness.”
Cask #23 Boann features a mash bill of 40% malted barley, 55% unmalted barley, 3.75% oats and 1.25% rye. The whiskey has been fully matured in a Moscatel de Setúbal cask, a fortified wine barrel originating from Portugal’s Setúbal Peninsula.
The use of Moscatel de Setúbal casks remains relatively uncommon in Irish whiskey maturation but has gained traction among craft distillers seeking distinctive flavor profiles. The cask type is known for imparting rich, honeyed and dried fruit characteristics to aged spirits.
The Heart Cut #23 features notes of raspberries, redcurrant jelly, apple pie, Rich Tea biscuits, and booze-soaked sultanas.
Boann Distillery, located in Drogheda, County Louth, has quickly established itself among Ireland’s growing roster of independent distilleries. The distillery experiments with numerous different grains at its purpose-built distillery.
Single Pot Still Irish whiskey, which is traditionally made from a mash bill of both malted and unmalted barley distilled in pot stills, is a distinctly Irish style. Once the dominant category in global whiskey, it experienced a sharp decline in the 20th century before a sustained revival led by both established producers and newer independents like Boann.
