Sullivans Cove releases French Oak ex-Apera single cask whisky TD0820 with 260 bottles
Sullivans Cove Distillery has released French Oak ex-Apera Single Cask TD0820, a 9-year-old Australian whisky yielding just 260 bottles at 47.6% ABV. The whisky was distilled in November 2015 and decanted in September 2025, having matured in a single 225-liter French oak ex-apera cask.

The release represents a collaboration between the Tasmanian distillery and Australia’s fortified wine industry through the use of apera casks.
Apera is the Australian term for fortified wines made in the sherry style, adopted by the industry in 2010 following negotiations with Spanish and European Union regulators.
“Our dedication to long-term maturation has remained the same since 1994, enabling us to consistently release Australia’s oldest whiskies, a choice underpinned by one ethos – the whisky comes good when the whisky comes good; we don’t bottle to a schedule, instead, we are guided by the liquid,” the distillery stated.
The Sullivans Cove Sensory Team described the whisky as “a rich, dark, and complex single cask, where bold cask influence meets a naturally full spirit.”
“The interplay of savoury, fruity, and citrus elements is well-structured, with integrated tannin and oak. Every component stands confidently, yet harmoniously, making this a compelling, multi-dimensional whisky,” they added.
Official tasting notes from the brand describe a citrus-dense nose featuring chocolate orange, blood orange, lemon, lime, candied fruit, Turkish delight, treacle, and warm bushland notes.
The palate reveals a full-bodied, slightly waxy texture that evolves to preserved citrus with honeycomb, rum and raisin, orange-chocolates, marmalade, whipped caramel, sticky cherry and mint.
The finish is characterized as long, sweet, and layered with dark chocolate, roasted peaches, butterscotch, grapefruit, lime soda, caramelized banana and praline.
Sullivans Cove has built its reputation on extended maturation periods and single cask releases since its founding in 1994.
The distillery’s French Oak range has previously garnered international recognition, including world whisky awards for its expressions.
