Virgin Hotels Las Vegas’ upscale dining venue introduces a new whiskey tasting experience featuring four distinct American whiskey styles, marking the latest addition to the restaurant’s beverage program.
ONE Steakhouse Brings Kentucky Whiskey Heritage to the Strip
The Bluegrass Flight showcases premium selections from Bardstown Bourbon Company and Green River Whiskey, offering guests four carefully chosen pours that represent bourbon, rye, wheat, and traditional whiskey varieties. Each selection highlights different aspects of American whiskey production, from the high-rye content spirits to wheated bourbon expressions.
The flight includes Green River Kentucky Straight Rye Whiskey, bottled at 95 proof with a 95% rye and 5% malted barley composition. According to the brand’s description, the rye features “Orange peel, fresh spearmint, and a touch of black pepper rise through the vanilla and graham cracker base.”

Premium Steaks Complement ONE Steakhouse’s Whiskey Program
The whiskey flight pairs with the restaurant’s extensive steak menu, which ranges from an 8-ounce flat iron at $39 to premium cuts designed for sharing. The 32-ounce double porterhouse costs $159, while the signature 32-ounce tomahawk with roasted chili rub commands $179. Additional options include filet mignon in various sizes and an 8-ounce hanger steak priced at $42.
Located within Virgin Hotels Las Vegas, Curio Collection by Hilton, the two-level steakhouse features a lounge area beneath a 3,000-light LED chandelier and an upstairs atrium with outdoor-facing windows. The venue operates under the direction of brothers Michael and David Morton, fourth-generation restaurateurs known for their steakhouse concepts.
The Bluegrass Flight represents a growing trend among Las Vegas steakhouses to expand beverage programs beyond traditional wine lists. As American whiskey continues to gain popularity among diners, venues compete to offer unique tasting experiences that showcase regional distilleries and production methods.
