
Texas-based Garrison Brothers Distillery has announced the 11th annual release of its limited edition Cowboy Bourbon. The uncut and unfiltered cask-strength whiskey will first be available at the distillery on Saturday, December 6, 2025, before a wider retail rollout later in the month.
The first 1,000 bottles of the 2025 expression will be sold on a first-come, first-served basis at the Hye, Texas, distillery beginning at 8am.
A total of 10,000 bottles will be available for 2025.
Each year, master distiller Donnis Todd hand-selects his most prized barrels, which are set aside for further maturation in the Texas climate to become Cowboy Bourbon.
The 2025 release was aged for at least eight years and is bottled at a cask strength of 146.4 proof.
“It’s strong and mean at first, but the all-encompassing flavor makes your mouth water, and you’ll begin to drool if you’re not careful,” shared Donnis Todd, master distiller at Garrison Brothers Distillery.
Todd added: “The flood of warmth never ends. Layered dried fruits and toasted marshmallows—it’s a Texas chaser you can’t stop sipping.”
According to the official notes from the brand, the bourbon has aromas of burnt wood, gun smoke, and toasted marshmallows. The palate delivers notes of black pepper and cooking spice balanced by plum and apricot.
First released in 2013, Cowboy Bourbon is the most sought-after expression in the distillery’s portfolio.
The previous 2024 release of Cowboy Bourbon was awarded a Double Platinum medal from the Ascot Awards. It also earned a Double Gold at the 2025 New York International Spirits Competition.
Furthermore, the 2025 Los Angeles Invitational Spirits Challenge gave the bourbon awards for Best Whiskey, Best of the Best, and Best of Class.
Founded in 2006, Garrison Brothers was the first legal whiskey distillery in Texas and the first distillery outside of Kentucky to produce authentic, corn-to-cork bourbon. The distillery uses Texas-grown grain for all of its expressions.
The 2025 Cowboy Bourbon will be available at select bars, restaurants, and retailers in mid-December. It carries a suggested retail price of $249.99.
