Eden Mill has unveiled Distiller’s Cask Release #1, the first in a new series of single cask single malt whiskies personally selected by head distiller Scott Ferguson. The 8-year-old lightly peated expression, matured in an ex-Amarone red wine cask from Northern Italy, is available now priced at £115.

READ THE STORYThe release marks the beginning of a collection that draws exclusively from casks filled and laid down by Ferguson during his tenure at the St Andrews-area distillery.
The spirit was produced from 100% peated malted barley, with peat sourced from St Fergus in Aberdeenshire at a phenol level of 20 to 30 PPM. It has been bottled at a batch strength of 53.2% ABV.

Only around 5% of the casks filled at Eden Mill’s original distillery — roughly 40 in total — held peated spirit. Of those, just two were filled into Amarone wine casks, resulting in an outturn of just 311 bottles.
Scott Ferguson, head distiller at Eden Mill, said: “Peated whisky is a style close to my heart and was probably my first love when it comes to whisky.”
“I understand it is not for everyone, which is why I have aimed to create a spirit that feels more accessible, balanced by a cask type that complements the whisky beautifully,” Ferguson added. “The light smoke is reminiscent of summer evening beach bonfires in St Andrews.”

Ferguson selected the batch strength of 53.2% ABV as the point where he feels the liquid shows its best.
Official tasting notes from the brand describe “velvety fig, maritime brine, leather and cigar tobacco, with black cherry and dark chocolate layered over floral peat.”
The Amarone cask is said to bring great depth to the whisky, layering black cherry and dark chocolate over the floral peat character, resulting in a full-bodied and rich dram with a long, lingering finish.
Eden Mill opened a new distillery and visitor experience in Guardbridge, St Andrews, in recent years, establishing itself as a notable dual-spirit producer with operations spanning both whisky and gin. The distillery has become a key part of Scotland’s growing whisky tourism landscape in Fife.
