
The Crolly Distillery has unveiled Croithlí Oloroso Single Cask, a limited-edition Irish single malt matured in ex-Oloroso Sherry casks. The release continues the Donegal distillery’s ultra-premium single cask collection and follows its earlier PX Single Cask expression.

It has been fully matured in European oak ex-Oloroso Sherry hogshead casks from the Juan Pino Cooperage in Córdoba, Spain. The casks were seasoned for two years with Oloroso sherry before arriving in Donegal.
There, they matured Croithlí’s direct fire spirit, which is double distilled over an open flame using traditional Charentais copper pot stills.
Oloroso Single Cask is bottled at its natural cask strength of 54.8% ABV. It is non-chill filtered and contains no added coloring.
According to the official notes from the brand, the whiskey offers “layers of dried fruit, warming spice, toasted oak and creamy sweetness,” complemented by the texture of the distillery’s direct fire distillation process.

Crolly Distillery co-founder Conor McMenamin said the release marks another milestone for the distillery.
“Every single cask release allows us to showcase a different side of Croithlí’s spirit, and Oloroso Single Cask is one we’re particularly proud of,” he said.
“The marriage of our direct fire distilled spirit with exceptional Oloroso casks has created a whiskey with remarkable richness, elegance and depth of character.”
McMenamin added that the single cask series reflects the distillery’s wider ambitions.
“Our single cask releases are about more than producing limited editions. They’re an opportunity to demonstrate what traditional craftsmanship, patience and exceptional wood management can achieve,” he said.
“Each one builds on the last, and each one helps establish Croithlí as a producer of premium Irish whiskey with its own distinctive style.”
The whiskey is distilled, matured and bottled entirely at The Crolly Distillery in the Donegal Gaeltacht.
Direct fire distillation, in which the pot still is heated by a naked flame rather than internal steam coils, is a traditional method now rarely used in modern whiskey production.
Croithlí said further limited-edition expressions are planned as the distillery expands in Ireland and abroad.
