Chattanooga Whiskey has unveiled Batch 046: Spiced Cacao Infused, the latest addition to its Experimental Single Batch Series featuring cacao nibs, spices, and dried chiles. The bourbon liqueur will be available at the Chattanooga Whiskey Experimental Distillery from November 20 for $54.99 per 750ml bottle.
The new release marks the return of Experimental Batch 028: Cacao Infused from 2022, with the addition of Guajillo and Pasilla dried chile to the infusion.
Inspired by Xocolatl, the legendary Aztec drink, the liqueur combines three select high rye malt and wheat malt mash bills distilled using pot and column techniques.

READ THE STORY“The history and lineage of hot cocoa is literally much ‘hotter’ than most people realize,” said Grant McCracken, founding distiller at Chattanooga Whiskey. “Early versions of sipping chocolate – which were developed by the Aztec and Mayan cultures – were actually served unsweetened and frothy at room temperature and often included the addition of hot chiles, which delivered a hot and spicy sensory experience.”
Over 200 pounds of cacao nibs and spices were used in the infusion process. Each ingredient was timed and removed according to its impact on the bourbon blend. The liqueur is bottled at 85 proof (42.5% ABV).
“At some point in the history of ‘hot cocoa’, the modern European style swapped out the capsaicin burn of Aztec intensity for the warm, sugary-sweet hot cocoa we Americans know of today,” McCracken added. “But who says you can’t have both?”
The official tasting notes from the brand include dark chocolate, prune, toasted chile pepper, chocolate-covered raisin, and creamy horchata. Chattanooga Whiskey describes Batch 046 as a “pre-built cocktail” ideal for holiday morning drinks or post-meal desserts served on ice.
The release will also be available online through Seelbachs.com for shipping to select states.
