Balcones Distilling recently launched “Pilgrimage,” a new addition to its lineup of American single malts.

In a statement from Balcones, the distillers called the new single malt a “tribute to both the journeys we are all on and the travelling companions we explore and wander with.”

Each Pilgrimage release will showcase different results in that exploration, and they say that none will be the same.

This first bottling of Pilgrimage is crafted with Golden Promise malted barley, aged in used casks and finished in Sauternes dessert wine barrels.

Balcones official tasting notes show that this initial batch of Pilgrimage features complex honeyed fruit notes of canned peaches, golden raisin and Asian pear with sweet, nutty grain notes of Baklava. These are supported by floral eddies of honeysuckle and dry herbal cardamom warmth with unexpected pops of Chinese five-spice and ginger chews with an acidic finish.

“We take great pride in our American single malts and the meticulous effort it takes to make each and every one of them unique,” said Jared Himstedt, Balcones head distiller, in a prepared statement. “Pilgrimage is an ode to the whisky journey we’ve been on, and we look forward to seeing where the journey takes us from here.”

Balcones Pilgrimage has a suggested retail price of $79.99 and is available for purchase across Texas and at the Balcones distillery in Waco. For more information, check out BalconesDistilling.com.
