Timorous Beastie Highland Malt Debuts ‘Cheese Cellar Collection’

Douglas Laing & Co. recently added to their Timorous Beastie line with the new “Cheese Cellar Collection.”

For this special edition, the whisky maker noted, Highland single malt whisky saw a lengthy finishing period in casks from renowned wine regions across the world.

In a prepared statement, Douglas Laing officials explained that the casks were specially selected for their layers of complexity and unique characteristics, and this whisky series was made to pair with artisan cheeses.

The first in this special collection is the Timorous Beastie Port Edition. The distiller’s notes describe the Highland malt as complex and that “the Port heritage is immediately apparent” bringing “juicy fruits, allspice and a cocoa sweetness.”

The makers of this whisky found the perfect pairing for the Port Edition to be Stilton cheese, thanks to its rich flavor and creamy texture.

The whisky features a different shaped black bottle than the original Timorous Beastie, and has a burgundy wax dip seal. The special release was created to “resemble a traditional bottle of Port, but with a bold, beastly twist,” the press release noted.

The Port Edition clocks in at 48% ABV, without coloring or chill-filtration.

Scott Morrison, Timorous Beastie brand manager said, “The launch of the Cheese Cellar Collection has been long awaited here at Douglas Laing. It’s a series that encourages you to expect the unexpected, embodying everything our mighty Highland malt stands for.”

The new release is limited to 700 cases, with 4,200 bottles sent out globally. Timorous Beastie Port Edition has a suggested price of £65/€75.
