Dublin distiller Pearse Lyons recently introduced an Irish single malt whiskey, the Genesis Release.
The whiskey has heritage behind its liquid, as the Lyons family are five generations of coopers prior to Dr. Pearse Lyons starting a distillery in Dublin in 2017. Today, Dr. Mark Lyons carries on the tradition, seven generations in.
The Lyons family announced that this inaugural release comes from the vatting of four casks, each distilled in the summer of 2017. Two of those casks were aged in Town Branch bourbon barrels solely, and another two aged in Town Branch bourbon barrels then finished in virgin oak.

The Genesis Release is meant to showcase the casks and quality of both Pearse Distillery’s Dublin whiskey and the casks sourced from their sister distillery in Lexington, Kentucky.
This release follows on the success of Pearse Lyons’ five-year-old single malt they put out in 2017.
The Genesis Release is limited to 888 hand-numbered bottles, which come in a bespoke Spire Case. The whiskey clocks in at 57.1% ABV, at natural color and non-chill filtered.
The distiller’s notes show that on the nose, Genesis features aromas of wood shavings and leather leading into hints of fruit cake, crisp apple, raspberry, pine and nutmeg spice.
The palate features caramelized oak, vanilla, baked apple crumble flavors with a light toffee viscosity. Its lingering finish tastes of apple and pear with a hint of white pepper and oak spice.
Pearse Lyons Genesis Release has a suggested retail price of €200, and is available at the Pearse Lyons website and at the Celtic Whiskey Shop.
