Savage & Cooke’s Latest Guero Reserve Whiskeys Made Available

Savage & Cooke out of California recently announced the release of their two latest Guero Reserve whiskeys, one of which has been finished in ex-Cognac barrels for a unique extended aging.

The first, the Savage & Cooke Lil’ Guero 7 Year Old Bourbon, was distilled in Indiana (likely MGP) and aged at Savage & Cooke in Northern California. A blend of 38 barrels chosen by Savage & Cooke master distiller Jordan Via, it was proofed at 100 with water from a high elevation property n Alexander Valley, 40 miles from the distillery.

Consisting of a mash bill of 75% corn/21% rye/4% malted barley, official tasting notes for it make mention that it is “expressive on the nose with maple, caramel and toasted oak. The palate follows with intense dark fruits, cacao and vanilla. Distinctive, delicious and memorable.”

The other whiskey in this release cycle for Savage & Cooke is Guero 6 Year Old Rye Finished In Cognac Barrels. It was distilled in Tennessee and aged at Savage & Cooke primarily in new, charred American oak barrels before being finished in barrels “that previously held Fine Champagne Cognac.”

Distilled from a mash bill of 51% rye, 45% corn and 4% malted barley, it also was proofed to 100 with water from the same source as the bourbon. Official tasting notes for it from Via showcase that it is “brooding and intriguing on the nose with orange marmalade and spicy oak. Expansive palate with an array of baking spices, caramel and honey. Gorgeous from start to end.”
