Great Lakes Distillery From Wisconsin Rolls Out Straight Bourbon, Rye Whiskeys

Great Lakes Distillery is Wisconsin’s first distillery since Prohibition, which means it has had a fair amount of time over the years to roll out a large range of spirits. Among these are a number of whiskeys, including two new ones released last month which look to be new permanent offerings.

A new brand called Still & Oak, according to a recent news story from OnMilwaukee, is being made available as straight bourbon and rye whiskeys. Each are aged at least two years, and have rested that time in full-sized 53 gallon new charred American oak barrels.

The Still & Oak Straight Bourbon, made in small batches with Wisconsin grown grains, has a mash bill that’s 67% corn, 22% malt and 11% rye. It is non-chill filtered and bottled at 43% ABV. The Still & Oak Straight Rye. meanwhile, is also made in small batches and features Wisconsin grown rye in its mix. The mash bill for it is 100 percent rye (78% rye, 22% malted rye) and it is bottled at 45% ABV.

Even though this will be permanent offerings for Great Lakes, it is expected there will be some waiting period between small batch releases. You’ll find limited official tasting notes for both below for your consideration.

Still & Oak Bourbon has rich aromas of pecan pie, leather, caramel, vanilla, and chocolate. Initial flavors are a warm, malty, medium-full body taste with notes of clove, oak spices, vanilla, caramel, and dried fruit that ends with a delightful long lasting finish.

The aroma of Still & Oak Straight Rye Whiskey starts with vanilla and honey, intermingling with floral and rose notes. The first taste brings flavors of vanilla and honey that give way to a delicious oak, walnut, cinnamon and spice floral body. Silky, medium-long honeyed rye toast and spiced nut finish.
