Rocky Mountain distillery 291 Colorado Whiskey recently launched a new expression,an all-rye whiskey.

A statement from the distiller notes that the new 100% rye malt is finished with Colorado aspen wood staves.

“We liked it so much that we decided to make it again,” said Michael Myers, CEO and founding distiller of 291 Colorado Whiskey. “This time, featuring Colorado malt from our friends at Root Shoot Malting out of Loveland, Colorado.”

Batch #1 is made up of 50% Colorado Malted Rye (Root Shoot Malting) and 50% German Rye Malt (Weyermann Specialty Malting). A total of 1,000 bottles were made, each one clocking in at 132.6 proof. It has a suggested retail price of $104.99.

The passion project of a former New York City fashion photographer, 291 Colorado Whiskey was first created in a small basement from a one-of-a-kind still, made from old copper photographic plates.

The distillery’s whiskeys are known for being finished with toasted staves of Colorado aspen trees.
