Leith-based Woven Whisky has partnered with pizza restaurant Civerinos to launch Hot Honey, a whisky blended around the flavor profile of chili-infused honey. The bottling will be available from 29 July 2026, priced at £40 per 700ml bottle. In line with Scotch Whisky Association regulations, which prohibit additives other than spirit caramel, it is labelled as a ‘spirit drink’ rather than a whisky.

The collaboration unites two Edinburgh brands with a shared interest in flavor. Woven Whisky and Civerinos previously worked together on a chili-laced honey drizzle, infused with Woven Homemade whisky, which was used as a limited-edition pizza topping.

For Hot Honey, the brands reversed the concept. Woven has blended a whisky designed around the taste of hot honey. The liquid combines North British Grain whisky with blossom honey, natural guajillo spice, and green jalapeño chilis. It is bottled at 43.1% ABV.

Pete Allison, co-founder and whisky maker at Woven Whisky, described how the idea began. “The best collaborations start organically. I was happily munching some Civerinos pizza in Brown’s of Leith when the chef asked if I wanted to try some hot honey pizza drizzle they’d infused with our whisky,” he said. “As soon as I tasted it my mind started plotting what it could become if we flipped it into a hot honey infused whisky.”

Allison said the reversal of the brief was central to the project. “We asked Civerinos if they’d help us build a whisky around the hot honey flavour profile and after some tastebud-shedding creative sessions, we had tasted enough to understand that the concept had legs,” he added.

Michele Civiera, founder of Civerinos, said the partnership “felt natural because we share the same space in Brown’s of Leith.”

“This isn’t a whisky with our logo slapped on it. It’s a proper collaboration where both sides brought something the other couldn’t do alone,” Civiera said.

According to the official notes from the brand, the whisky offers a rich texture with blossom honey sweetness up front, before rounded spice builds through guajillo warmth and green jalapeño heat, ending on a long, warming finish.

The bottling follows Woven’s coffee-flavored whisky, WXC, which won World’s Best Flavoured Whisky at the World Whisky Awards in March.

Hot Honey will be available from wovenwhisky.com, Brown’s of Leith, and all Civerinos locations.
