Official tasting notes from the brand list jalapeño, garlic, dill, and brown sugar.
To make the spirit, Wigle distilled a rye mash and brought it to 100 proof. The team then macerated dill weed, dill seed, garlic, mace, mustard, caraway, and coriander overnight before redistilling the spirit with the botanicals. The finished liquid was aged in a single, reused barrel. The Pickled Chef had first used the Wigle bourbon barrel to ferment its Wigle Whiskey Barrel Aged Fresno Hot Sauce before returning it to the distillery.
“Eau de Pickle has become one of our most anticipated Picklesburgh releases — it’s always popular, and it sells out every year,” said Alex Moser, COO at Wigle Whiskey. “With Spicy Eau de Pickle, we wanted to take that fan-favorite spirit and push it into new territory. The Pickled Chef’s barrel-aged hot sauce brings heat, depth, and complexity that kicks this release into the next level of beverages. It’s bold, briny, spicy, and completely Picklesburgh.”
Aquavit is a traditional Scandinavian-style spirit made by distilling a fermented grain or potato mash and redistilling it with herbs and botanicals. Its dominant flavor must come from caraway or dill, often accompanied by coriander, fennel, citrus peel, or cardamom.
