Pearse Lyons Distillery has launched The Camino Collection, its first single cask whiskey series featuring Irish Single Malt and Irish Pot Still expressions bottled at natural cask strength. The range debuts on July 25, 2026, coinciding with both the Feast of St. James the Greater and the distillery’s ninth anniversary, with prices starting from €100.
The collection celebrates seven generations of Lyons family craftsmanship, the historic St. James’s Church, and Ireland’s connection to the Camino de Santiago.
Each expression is matured in an individual cask and bottled in extremely limited quantities. Because every cask matures differently, no two releases are identical.

READ THE STORYThe whiskeys are drawn from Kentucky Vendome stills that operated in Carlow between 2012 and 2015, and from 2017 onwards in St. James’s Church in Dublin’s Liberties.
“The Camino Collection provides a platform for exceptional whiskeys from our inventory that don’t always have a place within our core range, allowing us to share unique and limited offerings that reflect our passion for innovation and craftsmanship,” said Conor Ryan, head of production operations at Pearse Lyons Distillery.
Three expressions are available first. The Irish Pot Still (PS 21-118 O), matured in an Oloroso hogshead at 59.1% ABV, and the Irish Single Malt (M 19-043 PX), matured in a Pedro Ximénez hogshead at 55.6% ABV, are available in Ireland.
The Irish Single Malt (M 14-C398 KA), matured in Kentucky bourbon barrel ale barrels at 54.3% ABV, is available in the USA.
The Irish releases can be purchased from the Dublin distillery, while the US expression is available at Town Branch Distillery in Lexington, Kentucky.
Each bottle features an original stained-glass neck label showcasing the scallop shell and spire, the enduring symbol of St. James and the Camino.
The Lyons family’s whiskey connection spans seven generations of coopers and distillers. Founder Dr. Pearse Lyons represented the sixth generation, while his son, Dr. Mark Lyons, continues the legacy as the seventh. Pearse Lyons Distillery was the sixth operating distillery in Ireland’s modern whiskey revival. Further single cask releases, hand-selected by industry partners worldwide, will follow.
