The Isle of Raasay Distillery has launched Rye Cask 3.4 x Distilled, a single cask single malt Scotch whisky with an outturn of just 246 bottles. Bottled at 59% ABV, the unpeated whisky was matured in an ex-Rye cask from Woodford Reserve and is priced at £95.

The release showcases the distillery’s production techniques and its approach to maturation and flavor development.

It explores the influence of Raasay’s still configuration, which features a purifier on the spirit still that can be switched on or off during distillation. The distillery believes this setup is unique in Scotland.

“When I designed our Isle of Raasay distillery, I wanted to create a system that allowed us to produce a range of different new make spirits,” said Alasdair Day, co-founder and master distiller at Isle of Raasay Distillery.

He added: “This release is all about the additional copper contact gained through using the spirit purifier. Distilled with unpeated barley with the purifier system engaged, the process creates what we describe as a ‘virtual third still’, producing a lighter distillate with elevated fruit character and a softer texture.”

Day continued: “It’s a new distillation technique for Raasay and one we’re incredibly excited to share.”

The whisky was distilled using Concerto and Laureate malt, with a three-day fermentation and an on-site 60-meter well as its water source. It was filled into cask on 25 June 2019 at 63.5% and bottled in May 2026.

The release is presented at natural color and non-chill filtered.

According to the official notes from the brand, the nose offers honeydew melon, pear and green apple. The palate carries caramel and buttery toffee, banana and stewed apple, while the finish brings sweet oak, lingering butter toffee and gentle spice.

Every drop of Isle of Raasay whisky is distilled, matured and bottled on the island itself. The island is home to a community of just 161 residents, a figure displayed on every bottle.

Rye Cask 3.4 x Distilled launched on Friday 29 May with limited availability via the Isle of Raasay Distillery website.
