In the Welsh Wind Releases Ceredig: UK's First Green Malt Blend

In the Welsh Wind Distillery has released Ceredig, the second expression in its trilogy of Blended Welsh Malt Whiskies and what the Ceredigion-based craft distillery believes is the first blended whisky in the UK to feature green malt. The limited small-batch release went on sale Friday, May 8, 2026, priced at $63 (£50) per 70cl bottle at 46% ABV.

Ceredig follows the distillery’s first blended expression, Brychan, and marks the first time In the Welsh Wind’s green malt whisky has appeared in a blended release.

Green malt is barley that has begun to germinate but has not yet been kilned. The production method remains rare in whisky making and imparts distinctive raw grain and cut grass characteristics.

The expression combines green malt whisky with kilned barley whisky aged in ex-bourbon and port barrels. It is non-chill filtered and unpeated.

Ellen Wakelam, co-founder of In the Welsh Wind, said: “Ceredig feels like the most honest expression of where we are. The green malt brings something raw and true to the blend — the taste of our fields, our coast, our process.”

“It is a whisky shaped by cask, coast and character, and we are incredibly proud to share it with the world,” Wakelam added.

The whisky is named after Ceredig, known as the lobster man of New Quay, drawing inspiration from the Ceredigion coastline where the distillery is located.

Wakelam also pointed to shifting consumer expectations around provenance. “We’re launching Ceredig at a moment when more drinkers want to know exactly where their whisky comes from and how it’s made,” she said. “Provenance, transparency and grain-to-glass storytelling matter in a way they didn’t a decade ago, and this is a whisky that has all that built in.”

Official tasting notes from the brand describe Ceredig as opening on the nose with red berries and vanilla, leading into custard and oaked red wine. The palate carries a mellow character, finishing with long savory notes of cut grass and raw grain.

In the Welsh Wind is an independent craft distillery founded by Wakelam on the west Wales coast. The distillery produces single malt whisky, blended Welsh malt whisky, gin, and vodka, and has received multiple awards across categories. Wales’s whisky sector has seen growing momentum in recent years, with several small producers contributing to a broader revival of Welsh whisky production.

Ceredig is available through the distillery’s website and its on-site shop. A third and final expression in the Blended Welsh Malt Whisky trilogy is expected to follow.
