In the Welsh Wind Distillery has released Meirion, the third and final expression in its Blended Welsh Malt Whisky trilogy. The whisky is available now from the Ceredigion distillery’s shop and website, priced at £60 per 70cl bottle.

Meirion follows the earlier Brychan and Ceredig releases in the series.

The expression is bottled at 46% ABV, peated and non-chill filtered.

READ THE STORY

It is built around three key elements: a masala cask for fruit and spice, a light touch of peat, and more green malt than featured in Ceredig.

Green malt is barley that has begun to germinate but has not yet been kilned. It has become a defining characteristic of the distillery’s whisky, first appearing in its single malt Rhif Un before moving into blended production with Ceredig. Ceredig is believed to be the first blended whisky in the UK to feature green malt.

According to the distillery, the unkilned malt gives the whisky its “raw grain character” and is the reason its whisky “tastes like nowhere else”.

Each expression in the trilogy is named for a character drawn from the history and landscape of Ceredigion. Meirion is described as “the man of the sea”.

Ellen Wakelam, co-founder of In the Welsh Wind, said: “Meirion is the end of the trilogy but it doesn’t feel like a full stop. It feels like the most confident one we’ve made.”

She added: “The green malt is more present here than in Ceredig, the masala cask takes the fruit somewhere unexpected, and the peat is just enough to remind you this is a whisky from a coast, not a classroom. We’re very proud of it.”

According to the official notes from the brand, the nose offers maritime salinity and brine leading into ripe pear, blackberry and soft caramel. The palate carries soft smoke, caramelised pear, dark berry fruit and herbaceous notes, while the finish is long and savoury with chargrilled red pepper, raw barley and dark chocolate.

The distillery recommends serving Meirion neat, warmed gently in the palm of the hand.

In the Welsh Wind is an independent craft distillery founded by Wakelam on the Ceredigion coast of West Wales. It produces single malt whisky, blended Welsh malt whisky, gin and vodka.
