
Copperworks Distilling Co. has unveiled two special releases crafted from a pair of St. George Spirits California Reserve Apple Brandy casks. The Seattle-based distillery will release Copperworks St. George Spirits Apple Brandy Cask Gin on February 6, 2026, followed by an exclusive whiskey for club members on February 23, 2026.
The gin release was finished in a St. George Apple Brandy cask for 1 year and 5 months. Limited to 326 bottles at 700ml, the gin is bottled at 50% ABV and priced at $49.99.

The whiskey release is an American single malt crafted from pale malt and matured in refilled Copperworks casks for 6 years and 5 months before being finished in Apple Brandy casks for 1 year and 7 months.
“It feels like we’ve known Head Distiller Dave Smith and Master Distiller Lance Winters forever, forging a friendship over innumerable encounters at conventions, expos, and hosting them at our distillery in Seattle,” said Copperworks President and Co-Founder Jason Parker.
“Having the opportunity to explore the possibilities of these two California Reserve Apple Brandy casks has been wonderful.”
Official tasting notes for the gin describe bright lemon and jasmine meeting sweet cedar and pink lady apple on the nose.
The palate reveals apple butter, juniper, candied orange, and sandalwood.
The finish brings spice cabinet with clove at the front, lemon heads, and fruit leather.
The Copperworks St. George Spirits Apple Brandy Cask Finished Whiskey boasts aromas of honeysuckle, apple blossom, and buttered cinnamon toast on the nose, followed by roasted pineapple, barley tea, cedar, apple skin, and sweet tobacco on the palate.
Just 380 bottles of the whiskey have been produced, bottled at 50% ABV. They will retail for $89.99.
St. George Spirits, founded in 1982, began as a distillery focused on eau de vie production.
The California distillery is also one of America’s oldest single malt whiskey producers, having begun distilling and maturing whiskey in 1997.
Members of the Copperworks Whiskey Club will have exclusive access to the apple brandy cask finished whiskey release. Those interested must join by Thursday, February 19 to receive this special release.
Copperworks operates two tasting rooms in Washington state. The main location sits at 1250 Alaskan Way in Seattle, with a second location at 7324 NE 175th Street in Kenmore.
Both releases represent a collaboration between two established American craft distilleries known for their innovative approaches to traditional spirits categories.
