
Seattle-based Copperworks Distilling Co. has launched Single Cask No. 160-2, a five-year-aged American Single Malt Whiskey and the distillery’s first expression crafted with 100% Lyon Malt barley. The limited release is restricted to just 197 bottles, priced at $89.99 each, and is available online and at both Copperworks tasting room locations.
The whiskey was made with 100% Lyon Malt sourced from Horlacher Farm in Latah, Washington. It matured for five years in a refilled American oak cask that previously held Copperworks Peated American Single Malt Whiskey.
Lyon is a two-row barley varietal developed by Washington State University’s Agricultural Research Center. It was bred specifically to thrive in Eastern Washington’s unique growing conditions.
The release falls under Copperworks’ Farmsmith series, which explores the impact of single variety, single farm, single growing year barley on whiskey character. By working directly with Washington farms, the distillery aims to showcase Pacific Northwest terroir in its spirits.
"Single Cask No. 160-2 showcases Washington’s agricultural excellence and the unique character that comes from working with local farmers," said Copperworks President and Co-Founder Jason Parker. "This is our first Lyon Malt expression, and it’s already an instant favorite among our team. The nuance and complexity are remarkable."
The bottle is presented at 61.6% ABV (123.2 proof) in 700ml format.
Official tasting notes from the brand describe "crème brûlée and sweet orange sorbet" marrying "patchouli, pine, and damp earth" on the nose. The palate offers "sarsaparilla and smoked cherry, cedar, and bubble gum." The finish is described as long, "beginning with menthol, pork belly, and peppercorn, and journeying through a dark chocolate raspberry reduction, spiced apple, sweet tobacco, toffee, and ash."
Copperworks Distilling Co. was founded in 2013 in Seattle and has built its reputation on a brewing-led approach to whiskey production. The distillery uses traditional brewing techniques before distillation, drawing on the founders’ backgrounds in craft brewing. Its portfolio centers on American Single Malt Whiskey, and the distillery has been a vocal advocate for the recently established American Single Malt Whiskey federal standard of identity.
Single Cask No. 160-2 is available for purchase online and at the distillery’s Seattle and Kenmore, Washington tasting rooms.
