Cabo Wabo Cantina Launches Spring Cocktail Menu in Vegas

Cabo Wabo Cantina has introduced a seasonal lineup of three spring cocktails at its Miracle Mile Shops location inside Planet Hollywood Resort & Casino in Las Vegas. The new drinks, available now, feature citrus, fresh fruit and floral flavor profiles, each priced at $16.95.

The spring menu includes the Limoncello Blueberry Spritz, made with limoncello, fresh blueberries and a splash of prosecco. The Margarita Rosé blends Lalo Blanco tequila, St-Germain elderflower liqueur, Dark Horse Rosé, fresh lime juice and lemonade.

Rounding out the trio is the Scorpion, a sweet and spicy cocktail featuring Tito’s Handmade Vodka, fresh strawberries, jalapeños, mint leaves, lime juice and soda water.

The cocktails are designed for patio sipping on the venue’s Strip-side terrace. Cabo Wabo Cantina suggests pairing the drinks with several signature dishes.

Recommended pairings include Sammy’s Tequila Shrimp, prepared with Baja shrimp sautéed in a garlic tequila-lime sauce with árbol chilis and cilantro, served over Mexican dirty rice. Additional options include ahi tuna ceviche with mango, jicama, wasabi crema and crispy wontons, as well as carne asada tacos with grilled beef, salsa árbol, avocado and corn tortillas.

The cantina was inspired by rock musician Sammy Hagar’s connection to Cabo San Lucas, Mexico. It has been awarded “Best Tequila Selection” in the Las Vegas Review-Journal’s “Best of Las Vegas” awards.

Lalo Blanco, the tequila featured in the Margarita Rosé, is a blanco expression produced in Jalisco, Mexico. Tito’s Handmade Vodka, used in the Scorpion, is distilled in Austin, Texas. St-Germain, the elderflower liqueur in the same cocktail, is owned by Bacardi.

The spring cocktail launch reflects a broader trend among Las Vegas hospitality venues refreshing their beverage programs on a seasonal basis. Strip-facing venues in particular lean into warm-weather menus as tourism numbers historically climb through spring and into summer months.
