WhistlePig has been making waves in American Whiskey for a few years now. Located in Shoreham, Vermont, and coming from such lineages as having the illustrious Dave Pickerell as their first Master Distiller, WhistlePig has been on an upward trend since it arrived. Since its conception, this distillery has focused on creating products synonymous with the Northeast of the United States.

The focus on the Northeast comes in multiple formats. Initially, the whiskey they created was distilled in Canada and made in the style of Northern Rye; rye whiskey made with no corn. The distillery would later double down on producing brands from materials native to their Vermont home. WhistlePig Farmstock Rye has been part of their line for several years and is from their own estate-grown rye and barrels produced from oak grown in Vermont. They’ve even consistently released top-shelf whiskey named after pigs they’ve raised on WhistlePig farm.

With such a focus on homegrown and Made-in-Vermont branding, it is no wonder that they have worked to produce maple syrup.

WhistlePig Maple Syrup is a collaboration project between WhistlePig and Runamok Maple. Runamok Maple is located in Vermont and has made maple syrup since 2009. The maple syrup is aged in WhistlePig barrels and won a Good Food Award in 2023. Good Food Awards represent exceptional flavors and craftsmanship and highlight producers dedicated to social and environmental responsibility.

Now for a little personal background: I’ve been employed in bars and restaurants for most of my life. In my years of employment, I’ve had a focus on working around whiskey, and in particular, American Whiskey. I’ve always been very fond of creating cocktails made in a fashion that displays the rationality of where that cocktail hails from.

With this in mind, I was excited to use WhistlePig Maple Syrup and WhistlePig Rye to create a few classics.

Maple syrup has a history of being used as a substitute for sugar in a classic Old Fashioned. It has held up over the years, and using any store-bought maple syrup will make a decent drink. However, as any chef will tell you, using the best ingredients will create the best flavors. In cocktails, this rings true as well. WhistlePig Maple Syrup is a great maple syrup that feels right to use in a cocktail. You can tell that it was crafted with care and created to bring out a wealth of flavor.

In the Old Fashioned, it held up against ten-year-old whiskey that is at a higher proof than many. WhistlePig Maple Syrup is a bit pricier than products I usually buy for mixing into my everyday drinks. However, for a special occasion, this maple syrup is a hit.
