Tasting Notes

About:

Made of corn, rye, and barley. Once distilled, bourbon is aged for two years in new American oak barrels. At bottling, a 5” long spiral cut piece of French Oak is added after it has been steeped in Maker Cellars Cabernet. Distilled in Lawrenceburg, IN. Bottled in Lewisville, TX. 90 proof. $65. Color: Polished Mahogany
Appearance:
Nose:
My initial reaction was a sweet nail polish remover. Underneath that is a light earthy and woodsy smell with hints of maple, cherry and apple. There’s a faint caramel or amber as well.
Palate:
Oak & Eden Bourbon & Vine is on the thin side. It’s fruity, tangy, and peppery. The flavors that come out include dates, eucalyptus, sassafras, cola, wood char, and caramel.
Finish:
Comments:
There’s a sweetness like a port that probably comes from the cabernet stepped oak spire. The other flavors are spicy, fruity, and tangy. Overall it’s a thin sipping whiskey but there’s a lingering flavor left in your mouth. I’m not sure I liked the aftertaste.rnrnThe beginning and middle are very pleasant and smooth but the finish has a bit too much wood and char for my liking. There’s a bit of acidity that probably comes from the wood spire. I feel this is a very sophisticated spire whiskey. Most I’ve had before were not as smooth or as sweet. I feel like this could be a great sipping whiskey for people, especially red wine lovers.
