Tasting Notes

About:

A high wheat bourbon that’s part of a more “craft” oriented Heaven Hill whiskey project that sees the use of a unique corn seed varietal as part of the mash bill. Aged six years, bottled at 121 proof without chill filtration and priced at $99.99.
Appearance:
The amber glow from this glass is nice, warm, and inviting, supported by excellent legs and thick viscosity.
Nose:
Baked bread, succulent vanilla, and oak catch the nose at the tip of the glass, luring you in to showcase further notes of brown sugar, creme brulee, warm gingerbread cookies, pears, and a bit of green apple.
Palate:
This is not just good; it’s quite stunning on the palate. It is well structured with warm bread, fresh vanilla, balanced oak, and a nice orange undertone. Other notes to consider here include white chocolate, panna cotta, hazelnuts, green apples, and a nod of cinnamon.
Finish:
This ends nearly perfectly, giving a bump of orange and softness that carries long and deep before fading off.
Comments:
Having long been a fan of Heaven Hill’s wheated offerings, this takes the cake with little effort. The unique corn seed varietal integration here does wonders to highlight the wheat characteristics, resulting in a classic offering.
