Kentucky’s Heaven Hill Distillery recently launched a new product from the Evan Williams Bourbon Experience … Square 6 Wheated Bourbon.
A statement from the distiller noted that this is actually the third Square 6 product to come from the artisanal distillery located in downtown Louisville, near the site of Williams’ original distillery founded in 1783.
Square 6 Wheated Bourbon is made up of two wheated bourbon mash bills, both married together after aging.
The distiller’s notes explain that the first mash bill consists of 74% corn, 16% wheat, and 10% malted barley. The second mash bill comes from 68% corn, 20% wheat, and 12% malted barley.
Square 6 Wheated Bourbon clocks in at 105 proof, the extra heat helping to highlight the wheated-taste profile.
The tasting notes show that on the nose, the bourbon has aromas of caramel, vanilla, figs, bing cherries and oak. On the palate, Square 6 Wheated has tastes of sweet confectioners’ sugar and walnuts. The finish is nutty, with oak tannins, baking spices, cinnamon and cola.
Artisanal Distiller Jodie Filiatreau said that the team distills one barrel of American whiskey a day at the Evan Williams Bourbon Experience, and they are constantly crafting mash bills and tweaking the hand-crafted pot still process for each new recipe.
“Blending two wheated bourbon mash bills gives Square 6 Wheated Bourbon a completely unique taste which differentiates it from others in the market,” Filiatreau said.
