About:
A limited-edition 2025 release, the Kilchoman 11-Year-Old 100% Islay Sherry Cask Matured single malt was distilled from Kilchoman’s 2011, 2012, and 2013 barley harvests. The barley variety was Publican, and the whisky was matured for a minimum of 11 years in ex-Oloroso sherry butts. The release combines 16 individually selected first-fill Oloroso sherry butts originally used by José y Migel Martin, Jerez, Spain. Bottled without added colour or chill-filtration at 50% ABV.
Appearance:
Rich Amber
Nose:
The nose opens with orange citrus, leading into sherry and dried fruits including currants and sultanas alongside a touch of apricot. Aromas of barbequed meat and sauce follow, accompanied by spicy notes of clove, pepper, and paprika. In the background, light peat smoke lingers throughout.
Palate:
A richly smoky, but slightly oily mouthfeel opens on the palate. Notes of dark chocolate with honey, giving way to lots of malty notes slightly reminiscent of a hoppy ale, before sweet sticky meaty BBQ sauce takes over.
Finish:
Long, grilled fruits appear on the finish with a touch of charred lemon and plums whilst stewed fruits return, balancing with the lingering sweet meaty note of BBQ sauce. Wood smoke echoes throughout the finish.

A limited-edition release, the Kilchoman 100% Islay Sherry Cask Matured expression offers a distinctive change to Kilchoman’s 100% Islay annual release series, which are typically matured fully in ex-bourbon barrels or combine a mix of ex-bourbon and sherry casks.

Exclusively matured in ex-Oloroso sherry butts which impart influences of stewed fruits and chocolate that are well integrated with Kilchoman’s characteristic smoke alongside malty and savoury meaty notes. I particularly enjoyed the sweet BBQ sauce note I picked up on the palate, and which lingered into the finish. I feel the 11-Year-Old 100% Islay Sherry Cask Matured release builds on the layers and complexity of Kilchoman’s sherry cask led Sanaig and annual Loch Gorm bottlings. Kilchoman enthusiasts and fans of peat-sweet sherry cask whiskies will love this!
