Tasting Notes

About:

Goldfinch is named for the fact that on this new release, Found North has finished about two thirds of the whiskies that were blended into it in barrels that held Sauternes, the honeyed dessert wine. It is the latest release in their High Altitude Collection mixed from a blend of 15, 20 and two 22 year old corn components blended with a 20 year old rye. Finished in a combination of Sauternes, cognac and highly toasted New American Oak. Bottled at 58.1% ABV. Sadly, the bottle can only be purchased through Found North’s lottery system, and dare we say, on the Secondary market. At only slightly above 8500 bottles, it won’t be around long.
Appearance:
Lightly colored honey.
Nose:
A tremendous nose at first sniff, combining lemon, forest pine, honey, and a wisp of graphite
Palate:
Rich and loud; sugared dried plums floating on corn whiskey, quickly enveloped by rye heat. It’s not sweet, but you know there’s sweetness hiding in there somewhere. It’s hot, but remarkably flavorful. The Sauternes provides its color, but is harder to detect in the taste. A slightly woodsy, slight vanilla flavor rounds out the experience.
Finish:
Short and warm flavor runs away quickly. Elegant mouthfeel.
Comments:
A noble experiment, and incredibly thoughtful as always from this maker. This will not be remembered as their best or most successful attempt, but rich and rewarding. Very interesting to see how essentially aged corn liquor can be balanced by rye and a remarkable aging program.
