Very Olde St. Nick Immaculata Edition Unveiled By Preservation Distillery

The makers of Very Olde St. Nick recently announced the release of their limited edition Immaculata Bourbon.

A statement from Preservation Distillery explained that Very Olde St. Nick is known for being pot distilled in small batches and artfully blended.

The Immaculata edition uses a base of 15-year-old, non-chill filtered bourbon at cask strengths between 115 and 120 proof. The distiller’s notes show this batch to feature aromas and tastes of cinnamon, allspice, and pitted fruits, as the bourbon is rounded out with a long finish.

The evolution of the Very Olde St. Nick brand brings the bourbon from scarce availability domestically to sought after releases. Originally created in 1986, and under the same ownership for more than 35 years, Olde St. Nick is made up of small releases over many years of collecting vintage stocks, barrels that are now coming of age.

The statement from Preservation notes that the whiskey maker owns a Kentucky distillery that produces small batches, and most recently, they’ve been able to bottle slightly more of the rare bourbon, with a focus on key distribution in their home market.

Preservation Distillery and Farm, located on a former 40-acre tobacco farm, was founded in 2015. The distillery’s portfolio includes Very Olde St. Nick, Rare Perfection, and Wattie Boone & Sons.
