Tasting Notes

About:

A modern classic in the realm of Billy Walker products. Initially matured in ex-bourbon and then finished in a combination of ex-Oloroso and ex-Pedro Ximenez sherry casks – this bottle has become a flagship release for the folks at GlenAllachie, and it’s new, heavily indulgent image.
Appearance:
Dark Orange
Nose:
Orange oil, cocoa nibs, sherry syrup, sherry soaked raisins, milk chocolate, chocolate orange, toasted nuts, walnut bitters, lemongrass and coca-cola syrup.
Palate:
Sweet, syrupy, gently drying and shows off what Billy Walker calls the ‘King of sherry’, those stunning Oloroso sherry casks. It’s nutty, raisin driven, spiced oranges, dark chocolate, orange oil, toasted pecan nuts, maple syrup and Manuka honey. The PX casks provide a bigger texture and rounds out any level of spiciness, but it’s a showcase of well balanced, integrated sherry cask maturation.
Finish:
Slightly drying and blooming with toasted nut oils and fragrant cooking spices like cinnamon and nutmeg, this is what sherry drinkers are really looking for. Sweet, toasty, a little savoury with over the top sherry when it can lead that way, red grapes, saturated raisins and sweet chocolate.
Comments:
Given the price of this across most markets, it’s a well priced, excellently balanced showcase of why Billy Walker is who he is. The master of sherry, King Midas of Jerez casks (as well as others) and many other titles that he is deserving of. A fabulous whisky, although I do have a massive sweet spot for the 12 year old release.
