Scotland’s Aberfeldy distillery, located in this whisky-loving nation’s Highland Scotch region, has a spirits-making history dating back to 1898. Founded by the Dewar brothers, John Alexander and Tommy, it was built on a site not far from the birthplace of their father, the blender John Dewar.

Alongside the distillery, and known to contain deposits of alluvial gold, flows the Pitilie Burn; this is the water source for what’s known affectionally by the brand as “the Golden Dram.” Inside, the distillery operations make use of whisky-making techniques like long fermentation, slow distillation in Alembic copper pot stills, and aging spirit inside a combination of barrels, hogsheads, and butts.

The whisky being reviewed here, Aberfeldy Limited Edition 15 Year Old Cadillac White Wine Cask, is part of the distillery’s Exceptional Casks Series. Developed by Malt Master Stephanie Macleod and her team, this collection focuses on secondary cask maturation and flavor development.

In this offering, you have a 15 year old Scotch single malt, first matured in a combination of refill casks, then finished for six months in ex-Cadillac Wine Casks, sourced from a 40-hectare estate. It is said by the brand that the casks in question herald from a place that, located in the heart of Entre-deux-Mers, Gironde, just south of Bordeaux, has an AOC terroir producing “sweet wines that are steeped in character and extremely aromatic, thanks to its favorable oceanic climate, lime-rich, gravelly soils and a sunny, south-facing aspect, and steep slopes.”
