Springbank Launches “Experimental” Sherry Whisky Cask Series

Springbank out of Scotland recently launched a new five part single malt whisky series exploring maturation in different types of sherry casks.

This new series, according to those behind it, has kicked off with the Springbank 10 Year Old Pedro Ximenez Cask Matured. The whisky has been aged seven years in ex-bourbon casks and three in “fresh” PX casks. It is said of this that “the Springbank character married with the sweet, rich PX influence creates a perfect winter-warmer dram.”

In explaining the plans for the series, Springbank made mention of the following on social media: “Our Director of Production [Findlay Ross] has worked with our sherry cask supplier to bring a variety of different seasoned casks to the distillery, deviating from our usual ‘Oloroso’ order. This will allow us to discover how Springbank whisky matures in other types of sherry cask, from the most powerful and rich PX casks to the lightest, freshest Manzanilla.

“In order to achieve a good balance during maturation, Findlay has devised a plan of staggered maturation, over a 5 year period which will enable us to release each edition in the series at the same age and strength, allowing us to focus on the variations that occur in flavour, colour, smell and body of the whisky.”

Springbank said 10,800 bottles of Springbank 10 Year Old Pedro Ximenez Cask Matured, bottled at 55% ABV, are being made available globally, pricing around £90 in the UK and in Europe. Official tasting notes are below from the brand.

  • Nose: An unmistakable Sherry influence presents itself from the beginning, with rich notes of date syrup and raisins kicking off this full-bodied dram.
  • Palate: A tannic, spicy element is introduced in the palate, along with notes of cola cubes, cherry menthol, cinnamon and caramel. The typical Springbank characteristics hold their own against the heavy PX influence in an apparent oiliness and damp, dunnage note.
  • Finish: The tannic element continues through to the finish, and PX qualities come to the forefront in notes of sultanas and rich spices.
