Scotch Whisky Bottler Compass Box Debuts Bottling For Legendary Chicago Bar

In the realms of legendary American whiskey bars, Chicago punk rock whiskey bar Delilah’s has been doing its thing for 25 years now. It plays host to hundreds of expressions from around the world, with all of them meant for drinking. Bar owner Mike Miller, in celebration of its anniversary, has teamed with independent Scotch whisky bottler Compass Box on a new limited release.

Compass Box Delilah’s XXV, according to those behind it, is built in part around a small bit of whisky which was held back from the last time Miller turned to Compass Box five years ago for a bottling tied to his 20th anniversary. This mix was said to have blended single malt and grain whiskies in a mix of new American oak barrels. What’s been done this time goes even more deep into the world of blending, with the addition of malt whisky aged in Spanish Sherry casks, also made of American oak. Here’s the breakdown more specifically of this new release, as detailed by the bottler:

  • Deliah’s 20th Anniversary Parcel (Refill Hogshead): 29% total liquid volume
  • Cameronbridge Grain Whisky (First Fill American oak): 10.5% total liquid volume
  • Miltonduff Malt Whisky (First Fill American oak): 10.5% total liquid volume
  • Teaninich Malt Whisky (First Fill Sherry butt): 20% total liquid volume
  • ? Malt Whisky made near Aberlour (First Fill Sherry butt): 15% total liquid volume
  • Linkwood Malt Whisky (First Fill Sherry butt): 15% total liquid volume

“Compass Box and Delilah’s share an ethos about doing things you love and on your terms,” said Compass Box Founder John Glaser in a prepared statement. “This is what brought Mike and me together years ago and it’s why our continued collaboration is so much fun and so gratifying.”

Plans call for 8,520 bottles of Delilah’s XXV to be made available, bottled at 46% ABV, for a price of £100, or about $135 USD. You’ll find limited official tasting notes for it below.

An effusive aroma of dried fruits, baking spices and light Sherry wine character. On the palate it’s soft and rich, with a complex sweetness in the form of vanilla and spice, and a finish of fresh green fruits and cream.
