After More Than 170 Years, Whisky Distilling Returns To Scottish City Of Stirling

Scotland’s Stirling Distillery recently launched the limited-edition VI Casks for its King James single malt whisky.

The six bottle set is made up of one bottle from six different flavored casks, bourbon, sherry, port, rum, wine and madeira. This, as the distillery moves into new-make whisky production.

Stirling Distillery often harkens to what’s described as the history and folklore of its namesake Scottish city through their range of products. The story goes that King James VI stabled his horses on the land the distillery is built on, and thus the VI Casks for King James were created.

Cameron McCann, Stirling co-owner, said in a prepared statement he is conscious of costs and wants whisky to be affordable for enthusiasts like him. “If your preference is for rare bottles rather than investing in casks, then the limited edition VI Casks for King James is the perfect choice.”

Cameron said he and his wife June wanted to evolve the distillery from gin to also being a whisky producer. It’s been 170 years since the original Stirling Distillery closed its doors and whisky making left the town.

Now, the VI Casks of King James whisky is created in the first legal distillery to sit on the castle rock, in the shadow of Stirling Castle.

June McCann said that Stirling Distillery sits on the border of the highlands, so despite being a lowland distillery, the whisky could be classified as lowland or highland.

“For us, the essential components for creating a truly special whisky are simple, from using only the best water, yeast and malted barley to the care that goes into hand selecting the best quality casks to develop the rich flavors,” she said. “Whisky production is a delicate process that takes time, love and passion and we’re excited to start our whisky journey.”

The distillery selects wood from across the globe in order to infuse their new make spirit with what’s believed to be the best flavor. For the VI Casks for King James, the McCanns laid down the spirit in a traditional dunnage in sight of Stirling Castle to ensure minimal temperature variation between seasons.

The bottles will be released bi-annually from 2027. There will be 300 bottles from a single cask and each set will cost £350. When buying a set, customers will get first refusal on any Stirling Distillery new-make whisky, receive a branded polo shirt, exclusive pin badge and will become a part of Stirling’s whisky history.
