Redbreast Releases Pedro Ximénez Edition In The US

| December 20, 2021

Redbreast Irish Whiskey just released its first limited edition expression from the Iberian Series collection for the United States, finished in ex-PX sherry casks.

This new, dedicated series looks to celebrate what’s said to be Redbreast’s connection to the fine wine and spirit makers of the world, in Iberia and Ireland particularly, combining whiskeys that are one-of-a-kind.

Redbreast Pedro Ximénez Edition is a single pot still Irish whiskey, triple distilled and initially matured in former bourbon and oloroso sherry casks, then re-casked into Pedro Ximénez hogsheads from the southern tip of Spain. They mature for another 12 to 22 months, producing a whiskey offering a sweet finish.

Half the size of a standard sherry cask, the increased surface area of the hogshead intensifies the flavor contribution from the Pedro Ximénez-soaked wood, imparting notes of treacle, raisins and orange zest which come from the sweeter grape variety used in the world-renowned sherry.

The Iberian Series collection joins Redbreast’s Lustau Edition, which launched in 2016, in the portfolio.

Redbreast Master Blender Billy Leighton said in a prepared statement the collection will “add new and unique flavors to the Redbreast portfolio for whiskey drinks to discover, with whiskeys finished in casks sourced from the sun-drenched bodegas of Spain and Portugal, suffused with the natural warmth and sweetness of the Iberian Peninsula.”

Crafted to the standards of Leighton and Blender Dave McCabe, Redbreast Single Pot Still Irish Whiskey Pedro Ximénez Edition is bottled at 46% ABV without chill-filtration. It’s now available in select markets nationwide for a suggested retail price of $95.99 USD.
